MoreWine! has teamed up with German company Keller to offer home winemakers a revolution in Bentonite Fining Products. Keller's new formulations are changing the way bentonite treatment takes place! Pre-soaked and prepared at the factory, these bentonites are ready for direct addition into your wine tanks or oak wine barrels! Due to their specific manufacturing process and the lack of sodium use as a counter-ion, these fining agents are 100% soluble in cold water, show little to no clumping upon dissolution and form significantly more compact lees than their sodium based counterparts. The compactness of the lees and the time saved through direct addition to the tanks means that these compounds will maximize the efficiency of your time in the winery and minimize product loss from performing the fining. Keller bentonites show a very high degree of protein adsorption, as well as that of biogenic amines which can cause headaches.
