What does this Mean? How can I benefit?

  • Year Around Winemaking: You can make high-quality wine from grapes any time of year. You are no longer limited to one season a year. Spread out your winemaking expenses across the whole year and manage fewer simultaneous fermentations at the same time!

  • Simple Winemaking Using Grapes: If you are a Kit Winemaker you can finally dive into the simple art of making wine from grapes. You can count on our easy directions and on-staff experts to guide you through every step of the process!

  • World Class Fruit: The grapes are world class and better than what most home winemakers have access to. Make the wine you know you can!

  • Freezing is a Benefit: Preserved perfectly at the peak of ripeness, reduced microbial action due to freezing, built in cold soak.

  • Save Time & Equipment: Whites are already destemmed, crushed and settled so no crusher or press is needed. Reds are already destemmed and crushed, so only a press is needed.

  • Easier: The numbers are already given to you including pH, TA and Brix saving you time, money and hassle and allowing you to be a better winemaker.

More on MoreWine!: We have been a long time user of Brehm frozen fruit and stand behind the quality 100%. We have developed the insulated packaging to ship frozen must directly to your door via UPS Ground or UPS 3-day service (For East Coast customers.) Fruit ships on Mondays and will arrive to you by Friday of the same week at temperatures below 45 degrees.

MoreWine! offers comprehensive classes in our Concord, CA winery with Brehm frozen fruit. The next class is Saturday July 18th.

More on Brehm Vineyards: For 30+ years Peter Brehm and company have been sourcing World Class fruit from famous growing areas such as Napa, Sonoma, and Washington State. At harvest time Peter destemms and crushes the grapes (whites are also pressed and settled) and places the must or juice in 6 gallon pails. The pails are then flash frozen at -10 degrees Fahrenheit. All lots are tested for pH, TA and Brix and this information is labeled on each container.

When Brehm Vineyards first began marketing frozen must and juice, there was the belief that frozen was just as good as fresh. Over 30 years of harvesting, processing and freezing wine grapes and juice has proven that you can capture and preserve the grapes at the peak moment of ripeness. Freezing also controls the timing of your winemaking and allows transport of your grapes in perfect condition. The kicker is, Brehm now believes their frozen grapes are better than fresh. Low microbe populations (reduced by frozen temperatures), a built in cold-soak, the releasing of desirable compounds in the freezing process, and the ability to know the approximate brix, acid(s) and pH, allows you to be a better winemaker.

Grape quality: MoreWine! stands behind the quality of this fruit, having made it now for eight years. Peter Brehm is your personal vineyard manager, visiting all sites and making sure that the grapes are being grown according to plan and that the grapes are harvested at peak ripeness. Brehm specializes in great fruit at extremely reasonable prices but if you want to go for the high-end, such as a Napa Cab, you can. Through relationships grown over time Peter has access to some world famous growers like Sangiacamo in Carneros and Caldwell in Napa. These are vineyards that many commercial wineries would love to buy from but do not have access to.

Compare to Wine Concentrate Kits:

  • Brehm frozen juice or must is often less expensive than high-end wine kits. Think about that for a second.
  • While wine kit quality has gotten better it still will not compare to the potential quality and freshness of this unconcentrated must.
  • Making wine from grapes also allows you to learn the whole art of winemaking and expand yourself as a winemaker.

Compare to Fresh Grapes

  • No sourcing
  • No driving to pick up
  • No physical picking of grapes (it’s fun for 30 minutes…)
  • Better quality than grapes shipped from the central valley
  • No risk that the fruit will be mediocre or even bad
  • Preserved at perfect ripeness
  • Make it any time of year to your schedule
  • No crushing/destemming nor pressing with whites, no crushing/destemming with reds
  • Receive general pH, brix and TA so you can develop a wine making game plan in advance.
  • Get fruit from growers that typically never sell to home winemakers
  • Save time and in some cases money
  • If you are planting a vineyard learn to make wine before your grapes are ready.

More Shipping Information:

We ship Brehm Frozen Must every Monday. Orders can be placed until 4pm Thursday of the previous week (we have to request to release fruit from the freezer by Friday morning so we can pick up Monday morning.) Any order placed after Thursday at 4:00 PM will ship the Monday after next.

Fruit will stay below 45 degrees Fahrenheit, until Saturday, even in 100+ degree temperatures. This enables you to plan your winemaking for the weekend after we ship. Customers on the East Coast need to select 3-Day Select as their shipping type so they can receive on Thursday. Unfortunately the fruit will not stay cold enough in the UPS warehouse over the weekend. Click here for a UPS transit map from our warehouse. If you live in the orange area we recommend you choose the 3-Day shipping option at checkout. All other colored regions will be fine with regular Ground shipping.

All customers should store the frozen grapes in the insulated shipping container until Friday. Remove the frozen grapes from the packaging on Friday night to allow for the final thaw by Saturday. If you plan to make wine on Sunday you will need to open the packaging Friday and check to ensure that there is still ice present or the temperature is close to 32F. If there is ice present on Friday you have the option to wait until Sunday to make wine. In this case remove the frozen grapes from the packaging on Saturday night to allow for the final thaw.
