ACTI-ML (50 g) AD347A
ACTI ML is a nutrient supplement developed by Lallemand for helping Malolactic cultures successfully ferment in harsh or low nutrient conditions. Recent research has shown that, as is the case with Go Ferm and yeast, Acti-ML is most effective when used in the bacteria's hydration phase. Acti-ML is still the nutrient of choice to re-energize stuck or sluggish ML fermentations. (Please note that if you use ACTI- ML in the hydration phase, unless your fermentation is problematic, it is not necessary to add it to the wine at the beginning of fermentation.)
Cellulose was chosen as one of the ingredients for this product since it is slow to settle and will aid in keeping the bacteria in suspension. When used as directed Acti-ML will not impart any aroma or flavor to your wine. Use Acti-ML at the following rates:
During hydration: 1g bacteria / 20g Acti-ML / 100mL H2O at 77F (25C).
So: for each 2.5g (66gal) sachet of bacteria, 50g of Acti-ML are added to 250mL of distilled H2O at 77F (25C). After 15 minutes add the bacteria/nutrient mixture to the wine.
Please note that, due to its' unique formulation, only Acti-ML can be used in the hydration phase of malolactic bacteria. Other ML nutrient formulas are not compatible with this protocol and their use during the hydration phase could severely limit the bacteria's viability!
Restarting stuck or sluggish fermentations: Use approximately 1 gram per gallon (.75g/gal).
