Brehm Fruit - Sauvignon Blanc - White Salmon Vineyard, Columbia Gorge WA 2011 BF192C
Sauvignon blanc is a classic white Bordeaux varietal. Crisp acidity and grassy flavors are the hallmarks of a fine Sauvignon Blanc. This particular lot of grapes comes from the personal vineyard of Peter Brehm. The vines are between 12 and 17 years old at this point, and have been dry farmed since their 4th year. Peter uses a Vertical Trellis system and spur pruning as his growing practices. The numbers on these grapes are in the perfect range for creating a balanced Sauvignon Blanc. The sugar content is at 22.8 Brix with a TA of 6.2 g/l. With proper practices this will create a fantastic wine!
Yeast Recommendations
Below please find some notes associated with our recommended yeast strains for use with this fruit. It is important to note that any yeast will in fact perform the fermentation, however these strains have consistently performed well and produced flavors that our customers have been very happy with. To that end, the "correct" yeast strain is simply the one that sounds to you as though it will make the flavors that you are looking for in your wine.
You can add the yeast strain of your choice from the "You Might Also Need" section below. We also strongly recommend the use of the additive pack that you will see listed in this section as it will help enhance the quality of the wine you produce. Order one packet of yeast and one additive pack per pail of must or juice.
BA11: In Sauvignon Blanc, fresh fruit aromas of citrus, pear/melon, tropical fruit and some spice develop, along with clean aromatics, lingering flavours, and an intensified mouthfeel.
VL3: Enhances the classic Sauvignon Blanc characteristics including citrus zest, lemon grass, and lime leaf. Very French in style, with complexity and not just fruit being emphasized. Good single-strain choice or as a blending component.
W15: Swiss isolate used to create white wines with a focus on intense, bright fruit and a heavy mouthfeel that gracefully stands up to long term aging.
