Petit Verdot is a small, intensely flavored grape that produces wine heavy in color, flavor and tannins. In Old World winemaking it has fallen out of favor due to its tendency to ripen late (if at all!). In Bordeaux winemaking where field blends are relied upon, this late ripening would cause major issues in the production process. In New World wine regions (such as Sonoma), oftentimes the climate is more than suitable to ripen these grapes in a timely manner, and they make fantastic single varietal wine, or are used to add structure in a blend. These grapes will produce a darkly flavored, full bodied, deep wine that will age in the bottle beautifully.

It is important to note that any yeast will in fact perform the fermentation, however these strains have consistently performed well and produced flavors that our customers have been very happy with. To that end, the "correct" yeast strain is simply the one that sounds to you as though it will make the flavors that you are looking for in your wine.

We also strongly recommend the use of the additive pack that you will see listed in this section as it will help enhance the quality of the wine you produce.
