Description

OSLO is a modern take on traditional Norwegian farmhouse brewing cultures.

OSLO can comfortably produce beautifully clean, lager-like beers at temperatures as high as 98F (37C) without noticeable off flavors. At the high end of fermentation temperature, beers can finish attenuating in as little as three days! This culture’s versatility and neutral flavor profile allows you to effortlessly produce most beer styles.

Bootleg is the first yeast lab to release this unique Kveik-family culture sourced from a raw beer made by our good friends at Eik & Tid in Oslo, Norway.

Brewing Info:

  • Type: Bottom fermenter. Saccharomyces bayanus / pastorianus / uvarum monoculture
  • Pitching Rate: Directly pitchable into 5 gallons of 1.050 or lower wort
  • Estimated Attenuation: 76-86%; attenuation will increase with higher fermentation temps or with successive repitches
  • Estimated Final pH: 4.3-4.6
  • Flavor/Aroma Profile: Clean, lager-like flavor profile, with no expected off flavors or phenols at high temperatures
  • Flocculation: Medium
  • Recommended Fermentation Temperature: 75F-98F (24C-37C); colder temperatures may result in higher final gravities or early flocculation/stalling. Pitch and Ferment at 85F (30C) or higher for quickest fermentation time.

30 plus batches and still going strong!
Simply outstanding. I purchased a single pack of Oslo in June of 21. Direct pitched into a standard 1.050 pilsner and set the temp to 95. Attenuated 83%. Harvested the slurry and re-pitched with 1 to 2 table spoons per 5 gallon batch 30 times over the past 1.5 years. The trick with this yeast in my brew house is O2 and nutrients. Take care of it and the culture will continue to produce over and over again. We are now entering fall of 2022 and I still have a thick cake to draw from in my fridge. I have made everything from Cold IPA, to American Light Lagger to various German lagers. I went through a phase of pitching and holding around 80 to 85F just to see what would happen. Attenuation dropped to the mid to low 70’s and fermentation time tripled. Harvested the slurry again and raised the temp back up to 95F and back up to 83% attenuation reliably. Really a great yeast and something special to play with and get to know. Learn its history and appreciate how it got to you, what it can do for your beer and enjoy.

Great yeast for hot summer brewing
The Oslo kveik is perfect for summer brewing in hot climate. I've brewed different ales with it and would rather use this than trying to cool wort down to traditional yeast fermentation temperatures. It ferments fast at 90-95F and doesn't seem to add any unwanted flavors to the beer.
