Brehm Fruit - Cabernet Sauvignon - Caldwell Vineyards, Combsville AVA, Napa Valley, CA 2019

Brehm Fruit - Cabernet Sauvignon - Caldwell Vineyards, Combsville AVA, Napa Valley, CA 2019

60 day no hassle return policy. Details

John Caldwell and his family have converted a tongue of decomposed lava in the Southeast corner of Napa Valley into a very top end vineyard and winery. Brehm Vineyards feel honored to have a portion of this famous vineyard allocated to our clients. Vines are tightly planted, meticulously tended to provide intense, very ripe grapes. Be prepared for a big, rich Cabernet Sauvignon that will deliver the best of Napa Valley while allowing a relatively early enjoyment.

The Caldwell family has farmed the southwestern lip of Napa Valley for two generations. The vineyard is farmed with extreme care. Located on a thin soiled, volcanic rim looking north into Napa Valley from their Combsville porch.  These grapes are usually harvested with high sugar, long hang time (26°-28° brix) and high pH. The grapes and the Caldwell wines have a loyal following. They are ‘out of the ordinary’ and not recommended for beginners, but for those seeking the Best!

  • Age: Planted in 1982
  • Irrigation: Drip irrigated
  • Trellis: Vertical, spur pruned
Caldwell Vineyards 2019 Cabernet Sauvignon notes:
Brix: 26.9
pH: 3.92

Yeast Recommendations

Below please find some notes associated with our recommended yeast strains for use with this fruit. It is important to note that any yeast will in fact perform the fermentation, however these strains have consistently performed well and produced flavors that our customers have been very happy with. To that end, the "correct" yeast strain is simply the one that sounds to you as though it will make the flavors that you are looking for in your wine.

You can add the yeast strain of your choice from the "You Might Also Need" section below. We also strongly recommend the use of the additive pack that you will see listed in this section as it will help enhance the quality of the wine you produce. Order one packet of yeast and one additive pack per pail of must or juice.

D80 - Big volume and fine grain tannin. Great for bringing more positive tannin intensity to a blend.

BDX - Good all-around choice for berry, plum, and jam in the Classic Bordeaux profile. Moderate rate fermenter with good colour retention. Useful for developing structure in the wine by re-enforcing existing tannins- both good and bad, so don't use with un-ripe fruit.

MT - Ability to enhance varietal fruit and floral aromas, along with strawberry jam, caramel, and spice notes. Good colour stability along with enhanced tannic structure and rich mouthfeel. Great by itself or as part of a blend.
