Description

The classic American ale strain. Famous for its clean, neutral flavor and its ability to be used in any style. Emphasizes malt and hops. Attenuates well. CALI is eligible for direct pitch straight into your wort. 

Every batch is PCR tested to ensure quality. 

Dosage:
Use at a rate of 12 grams per 5-6 gallons of wort.

Direct Pitch OR Rehydrate:
CALI yeast can be direct pitched with great results by sprinkling it onto the surface of the wort in your fermenter. However, proper hydration helps ensure a healthy fermentation and is especially recommended for beer with a starting gravity above 15°P (1.061 SG). To hydrate yeast, first sanitize the yeast pack and a pair of scissors. Boil tap water to sterilize and then cool to 85-95°F (29-35°C). Use 10 grams (0.35 oz) of water per gram of yeast. Sprinkle the yeast onto the water, allow the slurry to stand undisturbed for 20 minutes, and then swirl. Use small amounts of wort to adjust the temperature of the slurry to within 10°F (6°C) of the wort temp before pitching. Ferment between 59-72°F (15-22°C).

How many weeks in fermenter? 2 or 3? I used Cali Dry Yeast and have been fermenting at 67 degrees. Fermentation took off and was vigorous and seemed to finish after 3-4 days. OG was 1.062. Coming up on 2 weeks this weekend. I am wondering if I should raise the temp a bit or let it sit for longer. Thanks!

BEST ANSWER: This yeast usually finishes up a beer of this gravity in 10 days. A 4 day fermentation is fast but not worrying at 67 degrees. If the foam is gone and the yeast are sinking then they are done fermenting and you can start dry hopping. (Some belgian yeast strains truly limp over the finish line for 2-4 weeks.) Go ahead and take a sample and see how the beer tastes. We are looking for any buttery flavor or slick mouthfeel, and a stable final gravity. The Butter flavor is the last thing the yeast clean up before stopping fermentation and raising the temperature is a good way to help them finish this step. If the gravity is the same, say, on Thursday as it was Monday then you are 100% good to package, dry hop, or barrel that beer. Cheers!
Try to keep room temp at 69-72 but in Florida room can get to 74. Wort probably gets to 74-76. Anyone brewed warmer than 72?

Good stuff
Did a double batch of California common.
Cali in one, Mangrove jack M-54 in the other.
Both were good, Cali was best.
M-54 took forever to settle out.
Will be doing a Cali US-05 compare next.
Cali price is nice too.

Fermentation is overly vigorous
I have used this yeast for two five gallon batches during the time that my standby Safale US-05 was out of stock. Both times the fermentation was overly vigorous and produced lots of foam which stopped up my air lock and caused it to blow out from my fermenter. I never experienced this problem with US-05 after brewing over 50 batches with it. I will return to US-05.

High SPG DIPA
Used in a high SPG DIPA. Fermentation took off quickly and was vigorous. Complete to 1.006 SPG in a week. Sat on the trub for another week before a couple weeks in the corny keg. Pouring delicious beer now and still improving.

Switched from liquid yeast and love it!
I’ve always used liquid yeast since I had the impression it was better. But I gave Cali dry yeast a shot and it did amazing! I hydrated one 12g packet 30 min before pitching into 5 gallons of 1.053 Pale Ale. It was active in about 12 hours and stayed active for 4 days, with final gravity ending at 1.006. Very happy with the results!

I was really excited to try this yeast out. I went with a Sierra Nevada clone for it’s clean flavors as I wanted to see what this yeast can do. It doesn’t “go off” but gets going pretty fast. It leaves a lot of malty flavor behind which, if that’s what you want, is good. I was hoping for a cleaner, crisper yeast. I’ll probably go back to my go-to dry yeast Nottingham but keep this one in mind for some winter ales.
