The classic American ale strain. Famous for its clean, neutral flavor and its ability to be used in any style. Emphasizes malt and hops. Attenuates well. CALI is eligible for direct pitch straight into your wort. 

Every batch is PCR tested to ensure quality. 

Use at a rate of 12 grams per 5-6 gallons of wort.

Direct Pitch OR Rehydrate:
CALI yeast can be direct pitched with great results by sprinkling it onto the surface of the wort in your fermenter. However, proper hydration helps ensure a healthy fermentation and is especially recommended for beer with a starting gravity above 15°P (1.061 SG). To hydrate yeast, first sanitize the yeast pack and a pair of scissors. Boil tap water to sterilize and then cool to 85-95°F (29-35°C). Use 10 grams (0.35 oz) of water per gram of yeast. Sprinkle the yeast onto the water, allow the slurry to stand undisturbed for 20 minutes, and then swirl. Use small amounts of wort to adjust the temperature of the slurry to within 10°F (6°C) of the wort temp before pitching. Ferment between 59-72°F (15-22°C).

How do you tell from the code on the packet what the born date is of this yeast?

How many weeks in fermenter? 2 or 3? I used Cali Dry Yeast and have been fermenting at 67 degrees. Fermentation took off and was vigorous and seemed to finish after 3-4 days. OG was 1.062. Coming up on 2 weeks this weekend. I am wondering if I should raise the temp a bit or let it sit for longer. Thanks!

BEST ANSWER: This yeast usually finishes up a beer of this gravity in 10 days. A 4 day fermentation is fast but not worrying at 67 degrees. If the foam is gone and the yeast are sinking then they are done fermenting and you can start dry hopping. (Some belgian yeast strains truly limp over the finish line for 2-4 weeks.) Go ahead and take a sample and see how the beer tastes. We are looking for any buttery flavor or slick mouthfeel, and a stable final gravity. The Butter flavor is the last thing the yeast clean up before stopping fermentation and raising the temperature is a good way to help them finish this step. If the gravity is the same, say, on Thursday as it was Monday then you are 100% good to package, dry hop, or barrel that beer. Cheers!

BEST ANSWER: Absolutely! I've used this yeast many times and have never had an issue. Really great stuff for my IPA's
Try to keep room temp at 69-72 but in Florida room can get to 74. Wort probably gets to 74-76. Anyone brewed warmer than 72?

BEST ANSWER: Not seeing any specific info on that but S-05 which this yeast would most closely be related to has a tolerance of 9-11%.

BEST ANSWER: What I like abut it, it's fast. Last time I used it: 1.063 @ 88°- 1.012 @75° in 3 days.

A Great Value Yeast
I've used this a couple of times and had no problems at all. I will be getting some more next order I make as it will works with most of the beer I brew. Bottom line is that is a solid performing yeast at a great price.

Great value
Seems likely to be from Chico-strain...not much details on the web. Fermented fast attenuated pretty well (one batch out of 4 got stuck but I blame my process on that one). Can't beat the price.

Awesome Yeast!
I tried this yeast because MoreBeer was giving it away. I have been a Safale yeast user for the past year or so, and consider that to be a great yeast for a dry yeast. The Cali has been an incredible yeast. I brew a 5 gallon batch of a basic IPA almost a week ago, and the morning after I put the batch into the fermenter I already had fermentation. In the past five days I've gone from 1.060 to 1.005! To me this is incredible. I am going to use this same yeast in my next batch, and if I get the same results this will be my go to yeast for the foreseeable furture.

This yeast is awesome
I really like this yeast, and order more every time I shop. It's super easy to rehydrate, and it is reliable and well tolerant of the temp swings I make it live with in my cellar. Its a fast starter, and I often get floculation within 4 hours. In 2 days, this turns my fermenter into a fish pump, continuously producing off gas and munching away my sugars. Whats amazing is how clean it finishes. You have to be patient with it and wait the required 6 weeks. But it cleans up everything so nicely and you get fine beer. worthy of your glass.

Works well every time!
I started with this yeast and it worked super well for me! I hydrated it 15 mins before and matched pitch temp. Great fermentation and clean taste. Will definitely be using this as my go-to. I also visited a local brewer and he said this is his go-to also.

Vigorous fermentation
I used @5 grams of CellarScience CALI Dry Yeast on a 1 gallon batch of pale ale made with Golden Promise and Maris Otter and hopped with Zappa and Amarillo. Within 6-8 hours things were churning away. I have it bottle conditioning now and look forward to tasting it.

Great product
As a new homebrewer, I obviously had no idea what I was doing. This yeast was recommended by a brewer in town and it works beautifully for the IPAs I have made. I pitch directly around 80 degrees and let it fly. I will keep getting this product.
