Description

Clearzyme by CellarScience is an enzymatic solution to create clear beer by breaking down haze causing proteins so they cannot later bind with tannins. Because it specifically targets only haze active proteins, it has no effect on flavor, aroma or head retention.

Use:
Add 1/4 tsp per 5 gallons at the start of fermentation. Works best at a temperature range between 50-68°F and pH of 4-6.

Additional Notes:
Clearzyme is a protease, or proteolytic, enzyme that partially or totally hydrolyzes peptide bonds in protein. The resulting protein fractions are then too small to bond with the polyphenols in hops. One of the huge benefits of Clearzyme is that it removes the need to cold crash, saving time and energy. Clearzyme also breaks down the Gluten protein that causes allergic reactions. Beers made with barley and wheat that have had Clearzyme added typically show gluten levels below 20ppm. Store at temperatures under 70°F. Immediately recap bottle after each use.

The recommended shelf life is 12 months from the date the package is opened.

Will this work with Kveik at 95° fermentation temperature?

BEST ANSWER: Yes. This enzyme will work at these temperatures but will not be as efficient as when used at lower temperatures. It is possible to use this product a day or two before fermentation at colder temperatures before ramping up to the Kveik fermentation temperatures. This will break down the proteins just the same as if adding at the beginning of fermentation. It may not be possible to guarantee the same reduction to less than 20ppm without testing it for yourself. Hope this helps and everyone can have a safe time drinking the gluten reduced beer. Cheers!

BEST ANSWER: I believe it would work after fermentation. It is an enzyme that facilitates a chemical reaction. The yeast do not have anything to do with it. In my case I store my beer very cold after fermentation, which would slow down the reaction so much that it would not work. If you store your beer at room temperature for a week or so then it should work.
How long is recommended for it to work in primary before you can chill to serving temp?

This CellarScience clearzyme is saying that 1/4 tsp is enough for a 5g batch of beer, but Clarity Ferm says that you need 10ml (which is about 8x this amount). Is this more concentrated or are the recommended dosages off?

Best Value, Homebrewer-sized Brewer's Clarex enzyme!
FINALLY someone who's willing to sell homebrewers full-strength (not watered down) Brewer's Clarex at a reasonable price!

This ends up $1something per 5 gallon batch vs. White Labs Clarity Ferm, for the same enzyme.

This won't solve all your clarity problems; it only addresses "chill haze" and only the protein-side of chill haze, but this is an important piece of the clarity puzzle and it's now cheap enough to use for every beer that's not explicitly supposed to be hazy.

It is easy to use, it does not change de taste of the beer but in my batches I have not seen much of a difference in the haziness, and about the glutten I have no idea if it works or not

Great product
Along with good mashing practices and some clarifier after fermentation, this will help leave your beer crystal clear in the glass. I could make out PC desktop icons through the bottom of my glass of Irish Red Ale.

I’d hoped for clear beer
I did the math and added 2ml to an 8 gallon batch of IPA, transferring wort on top of the clarifier. At the end of fermentation I didn’t cold crash as I normally do, expecting the beer to be clear. It wasn’t. It looked like a NEIPA. After a couple of days in the kegerator, I added gelatin as usual and the beer looks great.
If I did the math wrong, I’ll retract this and try again, but as of now, I’m not impressed.

Like Gelatin, only easier.
I've used this product in several beers now (2.5 and 5 gallon batches). It works just as well as gelatin and is easier to use, which is saying something.

I went 5 days from grain to glass on 2.5 gallons of Juicy IPA with Hornindal Kveik. I added this at kegging on day 4 and the beer was clear (save for the necessary hop haze) in 5 days. Try it. You won't be sorry.
