Description

A rapid fermenting English ale strain that is loved for its clean flavor, neutral aroma and dry finish. This yeast settles quickly and forms a compact sediment. ENGLISH yeast is eligible for direct pitching. 

Every batch is PCR tested to ensure contamination free yeast. 

Dosage:
One sachet is enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2–3 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly.

Direct Pitch or Rehydrate:
ENGLISH yeast can be direct pitched with great results by sprinkling it onto the surface of the wort in your fermenter. However, proper hydration helps ensure a healthy fermentation and is especially recommended for beer with a starting gravity above 15°P (1.061 SG). To hydrate yeast, first sanitize the yeast pack and a pair of scissors. Boil tap water to sterilize and then cool to 85-95°F (29-35°C). Use 10 grams (0.35 oz) of water per gram of yeast. Sprinkle the yeast onto the water, allow the slurry to stand undisturbed for 20 minutes, and then swirl. Use small amounts of wort to adjust the temperature of the slurry to within 10°F (6°C) of the wort temp before pitching. Ferment between 59-70°F (15-21°C).

Trying this for the high floc! Sounds like it will get a dry Ale and if it does have the compact sediment it will take out any need for the fining to get the Pilsners clear

What is the expected attenuation for this yeast?

BEST ANSWER: My experience has been around 72 percent. I have read of other who over pitched this yeast by 25 to 50% and achieve higher ABV ranges than I have targeted in the past. Overfall I am very pleased with this yeast.
What's the alcohol tolerance of this yeast?

BEST ANSWER: Not really sure but I juat used this and found that 6% ABV and less 1 packet (12g) is perfectly fine, on the grave dirt porter I did I used 1.5 packets (18g) because the projected ABV was just over 7. Actual ABV came out to 8.28 with a 18g pitch.

So far, so good
Used this to brew an all-grain ESB. Incredibly fast ferment, about three days. Racked to secondary three days ago, now clear and ready to bottle. Only four stars because I haven't sampled the brew yet, but so far I'm impressed.

Dead Yeast
Yeast seems to be dead with no activity whatsoever and the packet was inflated upon arrival. Weird since i've used cellar labs cali ale yeast on at least 10 batches without any issues.

Totally caught off guard
I pitched this in a 15 brix 5 gal batch after oxygenating the wort. It went absolutely crazy with a violent blow off where there was a steady stream of krausen and CO2 pumping through the blowoff. It made short work of the beer and brought it down to 7 brix for a solid efficiency of 84%. Needless to say, I will pick this up again next time I am looking for an English ale yeast.

Dead yeast?
I purchased three packs of this yeast and two of them seemed inert, despite having stored them in a refrigerator. The first pack, which didn't have an expiration date, produced no visible signs of fermentation 51 hours after pitching, so I pitched the second. There were noticeable signs the next day, but unfortunately by then wild yeast had had time to set in and the batch was ruined. I pitched the third pack into a new wort yesterday, but with no signs of active fermentation after 24 hours I was concerned about another ruined batch. So, I pitched a pack of Nottingham and within a couple of hours there were signs of fermentation. Packs 3 should have been viable based on the expiration date.

I have no confidence in the English Ale variety of Cellar Science yeast, although I did have a good experience with the German Lager.

No sign of life after 24 hrs.
Pitched 12g in a 1.048 wort. If it starts this will be the slowest start in my 15 yr brewing history. …and I was looking forward to using Cellar Science products in the future. I think I’ll reconsider.

Not that good
Two batches, one a best bitter, the other an English pale. Strong ferment, fast finish, but not the correct flavor for either style. I'll head back to Wyeast or White for this style.

Quick fermenting yeast
This stuff worked great on a Porter. Went from 1053 to 1013 in 4 days at 62 for a nice 5.4% beverage in the winter.
