Description

This kit makes a pleasant and appealing Apple Cider. The kit is made from the highest quality NZ Grown Apples (50% Gala, 25% Braeburn and 25% Jazz) and the result is a clean and crisp cider. The apple flavours are light and pleasant and the overall taste is refreshing.

Makes about 2.5 gal (10 l) of cider

The kit includes a 1.65kg Apple Cider pouch and a 11g pack of Fermentis S-04 yeast.

Ferment at 18-28ºC / 64-77ºF (ideally near the middle of this range) for 4 days for a cider with medium residual sweetness or 7 days for a drier finish.

Original Gravity: 1.041 (10.5°P). Ferment until Final Gravity is 1.010 (2.5°P). Alcohol will be 4.10%.

DO NOT CLARIFY. The yeast will settle with the cooling and the cider will be clear

Good Starter Kit
Very simple and easy, flavorful - standard cider. Classic Apple-y and slightly tart taste. I followed the recipe, fermented for 4 days (I like it sweet after all) and just bottled today. Very average in both good and bad ways - didn't surprise, but didn't disappoint.Came out nice considering I have so little temp control in it - picture shows about 2 days into fermentation.

Good first kit, but not awesome result.
I think I gave this cider every chance to be its best, but it ended up rather flabby, not dry enough, and barely carbonated. I noticed the SG had stalled around 1.009 and prepped and added DV-10 wine yeast to try to drive it down into drier territory. I think I gave both innoculations the best possible start with GoFerm and Fermaid at the right times. Perhaps it needed even more of a nutrient boost than was recommended from these products. I'm considering de-bottling it all, adding some acid to taste, and re-adding sugar, nutrients and yeast to give carbonation another chance. Would be a good time to be a kegger! That said, it was my first cider, isn't totally undrinkable, and has me enthusiastic to make a press and make the real thing from apples!
