Description

  • Selected for its outstanding ability to conduct fast malolactic fermentation in high alcohol red wine
  • Direct inoculation, freeze-dried bacteria – does not require rehydration
  • High numbers of active cells which ensure a quick start of fermentation
  • Good for 66 gallons.

Viniflora CH16 is a freeze-dried pure culture of Oenococcus oeni. This malolactic bacterium has been carefully selected to induce malolactic fermentation in red wine with high alcohol levels, after direct inoculation. Viniflora CH16 has been isolated from a 16% Petit shiraz wine in the Russian River area of California, USA. The bacterium's natural environment gives a good picture of its application; CH16 has been carefully selected for its outstanding ability to conduct fast malolactic fermentation in high alcohol red wine (up to 16% v/v) with a pH value above 3.4.

Innoculation:
Viniflora CH16 should be added to dry wine, immediately after the alcoholic fermentation. Viniflora CH16 should always be inoculated directly into the wine. No rehydration or reactivation is required.

For more information about ML Bacteria, please see MoreWine!'s Guide to Malolactic Fermentation.

Characteristics:

  • Very high fermentation speed
  • Low production of volatile acidity

My other malolactic CH (Viniflora oenos) culture failed, and I think it was because my alcohol level was too high, so I ordered this CH16 because it has a higher alcohol tolerance.

Max batch size is 66 gallons. I am only making 6. Any concerns with inoculating the smaller batch with the entire packet? Asking due to the short shelf life of the bacteria once opened.
Kevin E Hart on Feb 10, 2019
do i need a ice pack?? it is a freeze dried ML
Peter Fox on Sep 24, 2019
BEST ANSWER: No ice pack necessary for shipping, IMO. When you get it, store it in the freezer until you're ready to use it. I sprinkle in into the wine at the end of primary fermentation and stir it in. Keep the temperature at 62 F or above. In about 6 weeks, MLF should be complete. You will see little bubbles coming up out of the wine during MLF.
when doing a freeze dried ML USING CH16, CAN I ADD THIS DIRECTLY TO THE WINE BEFORE ADDING THE ML BACTERIA?

Viniflora® CH16 | Dry Malolactic Bacteria | 1.5 g
Viniflora® CH16 | Dry Malolactic Bacteria | 1.5 g
ACTI-ML
ACTI-ML
BEST ANSWER: ACTI-ML isn't the nutrient designed to be added to the wine ... it's used during the initial hydration of the ML bacteria. The nutrient to add to the wine during ML is Opti Malo Plus.
Normally use VP41 which must be kept in the freezer until used. Is this requirement the same for CH16?
Michael Cesarz on Oct 8, 2020
BEST ANSWER: It says store at 0 degrees F on the packaging.
I HAVE CHR-HANSEN VINIFLORA CH16 ML BACTERIA, IF I PLAN TO DIRECT INOCULATE9 JUST SPRINKLE ON TOP ) DO I DO ANYTHING WITH THE ACTI-ML NUTRIENT IF I AM NOT REHYDRATING A STATER ML? THANK YOU

Viniflora® CH16 | Dry Malolactic Bacteria | 1.5 g
ACTI-ML 5 g
ACTI-ML 5 g
BEST ANSWER: The CH16 bacteria is designed to be used dry, so you can choose to use the Acti-ML or not. Acti-ML is normally used if the conditions for ML fermentation are known to be difficult, this would include things like low nutrient conditions, low pH, high alcohol etc. Act-ML can also be added directly to the wine as a ML nutrient if needed.
The MoreWine manual MLF states that 2.5 grams are needed for 66 gallons, but this product is shown to be 1.5 grams and good for 66 gallons. Is this correct? If so, do I adjust the proportions of Acti-ML and Opti-Malo for 1.5 grams rather than 2.5 grams of bacteria?
Matt Sommerfeld on Sep 11, 2019
BEST ANSWER: Hello Matt, this particular strain of bacteria is made to be used at 1.5 grams per 66 gallons of wine. The Acti-Ml and Opti-Malo plus dosages will remain the same. Acti-ML is to be used at 0.84 grams per gallon of wine and Opti-Malo plus is 1 gram per gallon of wine.

Not really a fair review
The pack I got didn't take hold. Temp was fine, acid level fine, no SO2. I'm guessing it was dead. This isn't really a fair review on the actual product, I just question if with all the shipping issues this past year has had a bad effect on products like these. Who knows, maybe my pack sat on a ship too long and got hot. No way to know. But I had to go buy a different culture and kiss the money I spent on this goodbye because it didn't work.

malolactic fermentation didn't start
malolactic fermentation didn't start. Yes, I've checked all the critical parameters such as % alcohol, sulfur, temp, etc. I have tried several fixes like trying in new must juice with no sulfur added to grapes, trying with a starter using pH adjusted store bought grape juice (no preservatives) but so far no indication malolactic fermentation has started. I will try a few more fixes but unless they work I'll look for another brand of bacteria.

Worked fast
I am making Cabernet Sauvignon wine from my grapes. I had crushed out about 12 gallons, so 2 six gallon fermenters. The instructions said this would inoculate 66 gallons and I divided it between the 2 batches, along with a package of malolactic nutrient. In just a few hours it was bubbling away. Very pleased.
