Good for 66 gallons. Oenococcus Oeni strain manufactured by Christian Hansen laboratories. Malolactic cultures are bacteria that convert harsher malic acid to lactic acid. They are often used in red wines to mellow them and sometimes in Chardonnay and Sauvignon Blanc to provide the buttery notes. This culture is added 2-3 days into the initial ferment while the alcohol levels are lower. This was the original ML strain that most winemakers used. Alcohol tolerance 14% v/v.

How do you prepare the dry Malo bacteria for use in a 5-6G carboy?

BEST ANSWER: Hi. I’ve used several of the Chris Hansen bacteria and this is the easiest as it’s direct add. I make over a barrel so I just add it directly at the peak of primary fermentation with some ml nutrients as the bacteria thrive in heat and the yeast hulls but it can be added at pressing or anytime after primary is well along. For 5-6 gallons I’d use a scale but you can use more than needed with no I’ll effect. Use 1/8 teaspoon for 5 gallons.

It is 66 gallons of must or finished wine we inoculate for? I have 83 gallons of merlot must and figure close to 60 gallons of wine.

I usually inoculate after the primary fermentation is complete, while it is in the barrel aging.

red wine batch .
I have used this product with good success and with a yeast additive it seems to go a little quicker. My experience with the 70 F rule for a good start to the MLf is important .. Testing at the end to determine when fermentation is ending also crucial to good tasting red wine..

The product isn't working this year
Hate to be critical of a product I've relied on for malolactic fermentation for upwards of 20 years. But this year it hasn't seemed to have worked; even after two attempts. The pH usually rises from around 2.1 to 2.5. But this year it hasn't risen above 2.3. I will be running chromatography test in a day or two.
So can't give a usual 5 star rating at this time.

Great stuff!
Past experiences with this product have been positive. The purchase I recently made is for my 2018 harvest. I've been using this ML strain for several years, it's my standard ML treatment.

Freeze dried Viniflora review
I have used this Malolactic bacteria for years. It always frements quickly and completely. I add it when my must reaches 80 degrees. It likes it warm.
