German Hefeweizen - Extract Beer Brewing Kit (5 Gallons)

A German-Style Wheat Beer with a blond color and hazy appearance. There is very little hops in this recipe because the flavor is based primarily on the flavor of the very specialized Hefeweizen yeast. Six pounds of Bavarian Dried Wheat Malt Extract, 60% wheat and 40% barley, is used as the base extract. A simple, yet award winning recipe that has become a favorite with our customers who enjoy German-Style Wheat Beer.

This kit does not contain any grain, only Malt Extract. No grain bag is needed.

Note: If your fermentation goes a little crazy at first, don't fret. Just clean off the airlock and replace it.

Please Note: In order to better serve our customers, we are now offering our extract recipe kits with either Liquid Malt Extract (LME) or Dried Malt Extract (DME). The majority of our DME kits were converted from the LME version, which is why you may notice slight variances in the extract names and quantities on your recipe sheet. You may also find that your Specific Gravity and ABV% are slightly higher if you choose DME. Whether LME or DME, add all extracts provided according to the recipe sheet. So I chose the white labs Hefeweizen liquid yeast pack. Is 1 pack of that yeast fine to use for this 5 gallon brew?

BEST ANSWER: Roger's answer above is excellent. The German Hefeweizen yeasts are known for being very vigorous fermenters. Since the signature hefeweizen flavors come primarily from the yeast you can experiment with different fermentation temperatures or pitching more/less yeast to encourage the development of the specific clove or banana flavors you would like. This is a great recipe to play around with as it has a lot to teach!
I've brewed this before but it turned out quite darker than I had hoped. Would putting the first 3 pounds of DME in at the beginning of the boil and the last 3 pounds towards the last 10 minutes result in a lighter beer with similar flavor?

Easy, delicious kit
Used DME. I find this tastes better than LME. This is an easy, delicious, and fast kit. Quick brew day because it is an easy recipe. Used WLP300. After fermentation, I cold crash for only a day because hefeweizen is supposed to be cloudy anyways, so quicker to the glass. I will be buying this kit again many times in the future years.

Our first Hefe
The flavor of this ale Hefe is something else. We get a little bit of smoky flavor, plus the wheat, and a fruity finish.

Great Hefeweizen
This beer is super simple to make but turns out great. 3 weeks in primary and then kegged. Nice banana/clove flavor. It takes virtually identical to a local craft version, only darker in color. WIll definitely make again.

Smooth clean beer
My brother and I brewed this beer because of liking the Hefeweizens we have tried. Did not disappoint. Very nice clean from first sip to finish.

Great Summer Brew
Added 0.4-oz freshly ground coriander seed and lemon zest at flame-out. Fermented with Imperial Organic Stefon yeast. 1-week in the primary then straight to the keg. Pressurized to 12-psi and shook until fully carbonated. After one week, it tastes great! This is one to drink as fresh as possible. Mouthfeel is a bit thin, but that's to be expected for a 4.5% Hefeweizen. Lots of yeast in suspension, but that's the way I like it. Might have cleared more in a secondary with cold crash but then you lose that lovely yeasty characteristic that pairs so well with the malt. The wife loves it. Great for these hot summer days!

This recipe works great with the Weihenstephaner yeast. It’s as close as I’ve ever come to the real thing.

Brew it !!!!
Very easy drinking beer. Great for those who aren’t part of the IPA craze. Can’t find an easier beer to brew. Great for those staring out. A bit hazy may want to use clarifier. Absolutely will brew again
