Our Imperial Stout recipe is one big daddy! A huge beer that features nearly 18 lbs of grain. Features Crystal, Chocolate, Roasted Barley and Black Patent. This Imperial Stout recipe makes an excellent beer for sipping in front of the fire. Ages for a long, long time eventually gaining some Port like flavors.

The recipe says 60 min boil, but has anyone tried or recommend taking the boil a bit longer to 75 mins or maybe even 120 mins? I've heard with bigger beers like barleywines and imperial stouts people prefer to do longer boils cause its supposed to develop more complex caramelization, and more of a rich character.

BEST ANSWER: Depending on the initial wort volume and boiling setup, I will often boil longer to bring down the final volume. I typically determine how long (75 / 90 minutes) before I start so I can stay to within the recommended hops time. Not sure how much it adds to the 'complex caramelization', but I always enjoy the end results!
Any suggestions on mash time, 60 minutes? 90 minutes?

BEST ANSWER: Hello Rick,
I did a 60 minute mash. However I normally do a pretty slow spare which has helped my starting gravity quite a bit. Also, you may consider adding air to your wort just prior to pitching your yeast. This has helped my attenuation greatly. Good luck and have fun.
I brewed this on Aug 12th and it's still fermenting as of right now (Nov 21). Is this normal? I used the cellerscience British yeast.

BEST ANSWER: Three months is a pretty extended time for a beer to ferment. Even a big imperial stout. I normally do not rely on the airlock to tell me if fermentation is complete. I usually look to see if the kreusen has fallen. The thick foamy layer on top of the beer will thin out and you can usually see the part or all of the surface of the beer with foam absent. If I really Want to confirm I will take a sample and measure the gravity with my hydrometer. I’d like to see an Imperial Stout finish with a gravity under 1.030.

Won 3rd place in my brewer's league SRM 30+ competition
I brewed this with my favorite fresh ground coffee. It turned out excellent. In fact is has become my all time favorite. It won 3rd place in a competition with 17 entries. I will definitely be brewing more of this. A lot more.

Amazing Stout
I have brew this beer many times. I love the heavy Imperial Stout. I have several times infused other flavors into this beer. The last time I juiced up pomegranate and added it to a secondary ferment to experiment.

Awesome Stout
Brewed this up a month or so ago...it's conditioning in the keg now, plan is to not tap it until this winter... we'll see how long that lasts. The beer tasted phenomenal when it was transferred to the keg...I've brewed a lot of Morebeer's all grain kits and they always come out awesome !!!

Great Beer
I've bought this recipe 3 times now. It's a great beer to build on. I've done barrel aged with 2 of them and I'm now doing a Mexican Hot Chocolate.

Delicious robust flavor, gets better with age!
This is a really nice beer! Best to let it age for a few months (goes without saying, I know). Try putting it on oak chunks that have been soaked in bourbon for an extra treat!

Fantastic Beer
I tried this beer 1-month after brewing it and I thought it was a dumper. I pulled it off the tap rotation and left it in the corner to age for 6-months. After 6-months I was shocked at how much this beer improved. Roasty, malty, dark fruits with very little alcohol bite. Everyone who tries this beer can't believe how good it is. Definitely buy this kit and age it for at least 6-months before drinking. 12-months would be even better. This beer will now be in my regular rotation.
