Kveik is a Norwegian word meaning yeast. In the Norwegian farmhouse tradition, kveik was preserved by drying and passed from generation to generation. Kveik is the original, traditional dried yeast! The LalBrew Voss strain was obtained from Sigmund Gjernes (Voss, Norway), who has maintained this culture using traditional methods since the 1980s and generously shared it with the wider brewing community. LalBrew Voss supports a wide range of fermentation temperatures between 25-40°C (77-104°F) with a very high optimal range of 35-40°C (95-104°F). Very fast fermentations are achieved within the optimal temperature range with full attenuation typically achieved within 2-3 days. The flavor profile is consistent across the entire temperature range: neutral with subtle fruity notes of orange and citrus. Flocculation is very high producing clear beers without filtration or use of process aids.

How many grams per gallon at 70°f of the dry voss? And what happens if you over pitch?

BEST ANSWER: I fermented at 85f and used 1/2 packet on a cream ale. Real vigorous fermentation, 1" firm krausen and continuous gas blowoff. Came out really well.
I think whole packet into 5 gallons may be over pitch but the pale ale was great.

Eats through anything and everything, 2-3 day fermentations are easy! Takes longer to carbonate than fermentation!
Kveik is awesome especially at the higher 95F temps. THIS IS NOT SA05 YEAST, be prepared. Depending on the hops, citrusy and fruity flavors are present. If brewing a 5-6 gallon batch and the OG is 1.070 or higher, make sure you double the yeast nutrient as this stuff chews through everything and fast! I highly recommend using a yeast starter if there's any doubt about the liveliness of your yeast packet.

An absolute beast of a yeast.....
This yeast is an absolute animal. Picture is an IPA with an OG of 1.061. 24 hours after pitch it is at 1.019 (at 85 degrees). With an expected FG of 1.013, it should be through fermenting in a couple more hours. Of course it will still needs some time prior to bottling, but I can see this being a great way to bump up the quantity in the pipeline....

Speed beer!
1 week in primary, 4 days in the bottle = a very drinkable Porter. Previously I did not brew in the Summer because my basement is too warm, but no excuses now! Kept it at about 82 deg. F during primary with the help of a heating pad.

King Kveik
Kveik is just plain awesome for so many reasons.

Even though I have very goos temperature control, I still use kveik strains. Love co-fermenting with other strains to drastically reduce conditioning time.

Spicy off character to beer
Gives a spicy, pepper like flavor that was not desirable in my pale ale. It fermented maybe a day faster than a typical house strain of yeast with a starter.

I like this yeast
I've only brewed two beers with it so far, a raw beer and a boiled wort beer, and both have turned out well. This yeast brings its own 'barnyard funk' to the table, a flavor more pronounced in the raw beer and more subtle in the other one. It's reminiscent of wet hay, unusual though not unpleasant, if you're into that sort of thing. Also a super fast fermentation, allowing me to bottle at day 5 or 6. Recommended!

Great fast fermenting yeast
You just can't beat this yeast for a really quick and flavorful NEIPA. Completely fermented out my OG 1.086 beer in 36 hours. The Great thing is you can ferment at higher temperatures. I've gone all the way up to 100°, but for my last batch I fermented at 80 degrees Fahrenheit. Beautiful results, no off flavors. I would recommend this to anyone who likes IPAs or NEIPAs.

I don't like kveik
I ordered this because of all of the rants that various home brew forums had on kveik and the great IPAs people were brewing with it. I have since learned that I don't like kveik and if you do you're wrong (this is obviously i joke - at least I hope it is obvious).

That being said, the yeast really worked great.
