MoreHaze! is a delicious, juicy, NE style double IPA.  This beer was brewed as a collaboration between EJ Phair Brewing Co. and MoreBeer!  We liked the beer so much that we wanted people to be able to brew it at home.  

The beer is very high in alcohol (9.1% ABV), low in bitterness, light in color and loaded with hops.  We dry hopped this beer in multiple stages, added lots of high protein grains and did not use any clarifying agents, which leads to a hazy beer loaded with flavor.  Flavor and aroma is very citrusy (orange, tangerine, grapefruit) and mildly danky.  The large addition of wheat and oats adds a soft, pillowy texture to the beer.  The feed back was that this beer is delicious and dangerously easy to drink at such a high ABV.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

The directions are a bit unclear: Should I be transferring to a secondary after 5 days? This seems a little early, but that is how I'm reading the instructions. Also, would it be recommended to dry hop within a bag, or just right in?

BEST ANSWER: Hello Tristan - In the directions we are referring to secondary as post fermentation. It is not necessary to rack the beer and move to another vessel. Concerning dry hop additions, I have found best results in not using a bag and pitching right in.
I am a new to this. Do i remove the dry hops after days 3-7 in the primary and same for secondary? or do i just leave them in?

BEST ANSWER: That is a great question. There lots of ways to approach this, depending on your personal tastes. However, that said, I think most brewers take the hops out of the primary after 3-7 days and remove the hops from the secondary after 3-5 days. For me, if I leave hops in greater than 4 days I start to get grassy flavors.

Does this require secondary fermentation?

BEST ANSWER: I spit this recipe into two batches using one Plastic fermenter and did not use secondary fermentation, beer turned out very good at above 9%abv very smooth and still a lot of hop flavour. If you don't have the equipment you can just leave it in for the additional time. Enjoy
I added the first round of dry hops in a sanitized muslin bag. Do I do the second round of dry hops with the first still in my fermenter or take the first out? I am using an SS Brewtech 7 gallon brew bucket and NOT transferring to secondary.

BEST ANSWER: Attempting to take the bag out at this point will only add to chances of bacterial growth. Add your second dry hop and remove them both when you're ready to bottle/keg
Maybe a silly question but the recipe sheet says 1lb corn sugar last 10min boil for all grain and they sent it with the extract kit i got, so do i still use it with the extract recipe?

What is the FG supposed to be? I'm stuck at 1.040 and put in primary over a week ago. Can i still add another yeast?

BEST ANSWER: You want it to be around 1.008-1.012 so possibly rousing the yeast gently, adding another high gravity yeast strain to lower that FG or warming the fermentr up so that the yeast can finish things up.
Can i add an additional 3 bags (16 oz) of priming sugar to the boil to boost abv? Not bottling and have leftovers

BEST ANSWER: Yes, you can add priming sugar to increase the ABV. I often keep some light DME handy if I my post boil gravity is not where it should be and add it to hit my target OG (make sure your wort is still above 180-190 when you add it and stir it well to dissolve). DME willl have a different effect (color and flavor) than priming sugar, but no big deal. Use it.
For the hops added at end of boil, the instructions say Whirlpool. What does this mean? Do these hops get removed before pitching or after pitching?

BEST ANSWER: So the whirlpool process is hopping at point that is lower than boiling but not much so you get all of the oils out of the hops. You do it in the pot before it goes into your carboy. Here is some info I found “ The medium whirlpool range is roughly 160–170°F (71–76°C). In this range, there is little isomerization going on, so you will not be adding much bitterness. Also, volatilization is reduced, so you will preserve more hops oils. Fortunately, the wort is still hot enough to allow good solubility for the oils. This is a good compromise range to use if you are looking to preserve hops oils with minimal whirlpool time, and it is probably a good range for homebrewers to work in since it does not require an excessively long whirlpool.”
Do I bottle after 14 days with this recipe? I'm use to waiting a month before I bottle extracts. Thanks

BEST ANSWER: I wait until it stops working in the fermentation bucket and then bottle. Normally takes a couple of weeks plus/ minus a day or two.
Hey getting ready to start. Have done dozens of extract brews but this is my first NEDIPA. Wanted to make sure the flaked oats and wheat aren’t supposed to be milled?

BEST ANSWER: Just mash them as they are. If they were whole oats, you'd have to flake them. But, since they're already done, just add as usual to your mash.
Should I strain the hops from the boil, prior to transferring to the fermenter?

BEST ANSWER: So i usually use hop bags and pull them out after boiling. But if you don't use hop bags you would usually run the entire batch though a strainer as it is going into the fermenter. As much sediment you can get out before the better. If you don't it just is more sediment in your fermenter.
You list 5 different kinds of yeast, which one would be best or what are the advantages of each?

I brewed this on August 25. Without a starter, I pitched one pack of gigayeast directly into it (appx 3 months from manufacture date). I took an original gravity reading around 1.070. Fermenting did not start for 24-36 hours but now there is thick Krausen and lots of activity but still no air bubbles in airlock and I have sealed the lid in case it was leaking. Should I pitch more yeast at this point or just let it go?

BEST ANSWER: Hi James - If a thick krausen is present, there may still be a leak somewhere.
1st brew ever. Took about 12 hrs to start seeing real action in my blow off (using SS Brew Bucket). Fermented like crazy for 4 days. Changed blow off jar because 1st one was getting nasty. Careful to sanitize everything. Noticed later that day fermenting slowed to crawl. Day 5 added 2nd dry hops. No more krausen at top and color looked dark. Seemed like i saw some action again for a bit then stopped. Tomorrow is Day 6. Is my beer going to be okay?? Advice please!!!

BEST ANSWER: Hi John - Sounds like you have a great fermentation going and nothing to worry about. Dry hopping will increase activity in your blow of from the hops releasing absorbed co2 in the beer, these nucleation points will also break down the build up of krausen. Sounds like you have a great beer on the way and nothing to worry about.
How much yeast should I use for this recipe and what kind?

BEST ANSWER: For any recipe that has an estimated abv of over 6% we recommend using a yeast starter or two packets of yeast.

Not what I was expecting
This turned out to be a little more complicated then normal because of the dry hopping, the taste was not what I was expecting but to my surprise it is very good will buy again.

First Hazy
I also fell short on the OG around 1.074 and my final was 1.016 (I put 5.5 gallons in the carboy). This was in the fermenter a bit longer than I wanted at 23 days (dry hoped for like 20 - 15 days! no secondary). I followed the dry hop schedule accordingly and then had to evacuate my house for wildfire for 10 days about midway through. I made huge yeast starter (500 to 700 billion cells in anticipation of 1.084 OG) which may be why I didn't get the final gravity as low as anticipated? Tasted good at bottling so I will revise if failure occurs form here. I used the Palmer method of adding the second half of extract at 15 minutes to go and the color is way better than in previous extract batches.

Good... I meant to purchase all-grain... but this was an excellent kit. Color is amazing, has a touch of a honey taste as well. Very tasty ... smelled great as it fermented.

Nice kit
Unpacked the kit and everything was well packed and labeled. While there are no instructions as to when, how long etc to steep the grains, oatmeal etc, I assumed these items were the "grains" to steep for 20mins and remove once wort reached 170 degrees. I also assumed the 10lbs of malt and 1lb dextrose also was intended for the full 60min boil, again no clear directions - thus the four stars. I added the hops per the timing noted. On day two its a beautiful golden orange color just like the photo and fermenting profusely. Can't wait to taste it...Will update then. But so far, so good.

Not as Expected
I will start by saying that the instructions were well written and customer service was available and helpful. These people seem to have a passion for what they do! I will also say that this was not my first time brewing, I have made many successful batches.
I'm not sure if the wrong malt was placed in the kit, but I immediately noticed it was much darker than I had imagined. You can see in the photo that this beer turned out very dark for an IPA, which I attribute to the malt.
The final kicker was after waiting 4 weeks (2 weeks fermenting, 2 weeks bottling) I went to sample and it was flat. I don't blame MoreBeer as they did not provide the yeast. The lack of carbonation I blame myself for; I am moving the bottles to a warmer part of the house to see if that helps.
Needless to say, I'm disappointed with the results.

Almost perfect.
Since Haze Craze has been my favorite recipe for quite some time, I was excited to try the Double IPA version, MoreHaze. After looking at the recipe I noticed immediately the copious amounts of Simcoe in this one. A little leery of too much pine, I eliminated the drop hop addition of Simcoe to secoonday. That was a good decision. There are still plenty of pine notes in this recipe. Maybe still a little too much. I love the citrus and fruit to come through as prominent. A little Simcoe is fine but it needs to be tamed. I'd give this recipe 5 stars if the Simcoe was dropped to .5 oz in primary and eliminated from secondary.
