For the serious home winemaker or a very small winery, this machine represents an amazing value. It is gentle, easy to load, and pumps the grapes into your awaiting fermenter, eliminating the need for a separate must pump.

Why No Crushing Rollers?
Because you don't need them. Here is how it works. You put fruit in the top bin and the screw feed moves the fruit to the left where it drops down into the destemming chamber. The fruit is destemmed and grapes drop down through the grate to the next level. Stems are ejected out the end of the destemming chamber and onto a tarp on the ground. After the fruit drops through the destemming chamber it falls into a bin at the bottom of the machine that has a screw feed. The screw feed pushes the grapes to the right where they are pushed into a circular chamber. In the circular chamber, a paddle wheel, pushes grapes back out the exit tube, through a 2.5" hose, you attach, and into the awaiting fermenters.

Why this machine is so popular in Italy
Because they know you don't need rollers on this type of machine. The action of the two screws, the destemming chamber and the paddle wheel crack the berries.

More on the Built-in Must Pump
The built in paddle-wheel style must pump can push fruit an average of 12' high with a 10' horizontal run OR up to 4' high with a 40' horizontal run. These are estimates only: actual results will vary on factors such as the total load on the machine and the viscosity of the must in the transfer tube. It can only be used at processing time and cannot be used later in the winemaking process.

A Great Value!
We recommend this machine for small wineries or larger home producers who do not wish to make the considerable jump to truly commercial quality equipment. You can make very, very good wine with this machine and we often tell small winery owners that the money saved can be used more effectively in other ways to make great wine.

Is there a machine that will destem Pinot noir without crushing the berries?
Natale on May 20, 2018
BEST ANSWER: A destemer with soft paddles is the best bet. Keep in mind that if you use a auger feed or a must pump it will mash some of the berries. Best would be soft paddles to destem and drop the berries directly into the fermenter. Interesting that some of the mechanical harvesters with sort options do a good job on intact berries without stems and low pips.

Works but not great!
On first use - one of the paddles snapped off due to poor welding.

Almost no stems in must
We have been using an earlier model of this WE236 destemmer for 4 years.

It does a fantastic job of removing almost all of the stems and the grapes are popped versus crushed. It easily destems our small crop of 2,000 pounds in less than 45 minutes.

The clean-up is a bit of a chore, because the cover where the stems are collected needs to be removed in order to access the internal tray in order to clean the interior. The clean-up actually takes longer than the destemming.

You will need to purchase a 2-1/2" food grade hose to attach to the spout at the base of the machine. We use a 10 foot length of hose, and the internal pump has no problem pushing the must from ground level to the top of the fermentation tank. But, once all grapes have been processed, you can expect to see another 5-15 pounds of must in the hose and internal compartments. Salvaging the must from the food grade hose is easy enough. But, getting the remainder out of the destemmer requires lifting one end and tilting it towards the spout.

It does require a 220 volt outlet, and the model we purchased came with a six foot cord. The current model states that it is bare wire, so you will need an electrician to wire.

For the money, this is an excellent purchase.
