The Ruby Grapes Vineyard is located in the Ruby Hill region of the Livermore Valley, our grapes are sourced from the very best Livermore Valley has to offer. Pinot Noir is a French grape variety with low tannins that can be used to make sparkling wine. Available in 2022

Yeast Recommendations:


Below please find some notes associated with our recommended yeast strains for use with this fruit. It is important to note that any yeast will in fact perform the fermentation, however these strains have consistently performed well and produced flavors that our customers have been very happy with. To that end, the "correct" yeast strain is simply the one that sounds to you as though it will make the flavors that you are looking for in your wine.

You can add the yeast strain of your choice from the "You Might Also Need" section below. We also strongly recommend the use of the additive pack that you will see listed in this section as it will help enhance the quality of the wine you produce. Order one packet of yeast and one additive pack per pail of must or juice.

AMH:  Enhances clove and nutmeg spicy elements, complex with good red fruit flavours and aromas. Colour friendly, some mouthfeel and structure, as well.

RC212: Ripe berry, bright fruit and spice. More structure than mouthfeel, with good colour retention.

W15: Normally for German whites, when used in a Pinot, W15 will give bright fruit focusing on berry notes as well as contribute mouthfeel.

ICV-GRE: Brings fresh, berry fruit foreword along with good mouthfeel. Useful for adding fresh fruit to a blend. Effective for reducing herbaceous and vegetal notes in under-ripe fruit.

Taking frizen grapes to wine
When I first opened the lid - i was concerened - the frozen grapes looked - well - semi-frozen - a real mess. Once it thawed it looked fine. The grapes cold soaked a futher 4 days, compliant to enzymes that deepened the color and extracted great flavor potential and aroma. AMH yeast did a great job converting the sugars to a 12.8% alc with excellent color. To say the least I am very happy with these grapes!

Great product
Ordered the pail of frozen must and it arrived in one week still frozen and in great shape. Negligible amount of stems or leaves in the must. After thawing, I did a 1-week cold maceration at 45 degrees F. Before initiating fermentation, pH was 3.58, TA was only 0.35, and OG was 1.086. Added 40 grams tartaric acid to reduce pH and increase TA, and capitalized with corn sugar to increase OG to 1.100. Pitched Lalvin RC212 yeast and adding Fermaid K as indicated. All indications so far is that this will turn out well.

THIS IS A GREAT GRAPE SOURCE
My second order through More Beer and grapes arrived from this supplier safe and sound, again. Seemingly in excellent condition, the must fermented well and so far taste is good with some minor adjustments. Brixx initially tested at 25 as advertised. Acid was a little lower on my test although my acid test has been lower than supplier on prior tests (and for other supplier grapes) which tells me it is probably my testing?? Very happy with this grape supplier.
