Description

German ale yeast selected for its ability to form a large firm head when fermenting. Suitable to brew ales with low esters and can be used for Belgian type wheat beers. Its lower attenuation profile makes for beers with a good mouthfeel. This ale yeast works at a wide temperature range between 54-77°F, but ideally between 59-68°F. Highly flocculent.

Does this yeast produce enough Krausen to require setting your airlock as a blowoff (using the barb inside the airlock and some tubing to go into a bucket of water) instead of a traditional 3-piece airlock? Have you had any issues with Krausen clogging up a 3-piece airlock?

BEST ANSWER: like all yeast it depends on the OG number, the amount of yeast pitched and the temperature; nevertheless, it works well at OG under 1.06, one pack of K97, wort temp at pitching of 65 degrees and room temp at 68 degrees.

l love this yeast
this yeast is a workhorse. very consistent results and excellent flavor notes. i've used mostly for IPA and DIPA. A++

Solid and Dependable
I used one packet to ferment 5 gallons of Alt bier. Rather than rehydrate as I usually do for lagers, I sprinkled the packet directly onto of the top of wort at 58F. It took about 24 hours for fermentation to ramp up, and it was nearly complete five days later. I used dry yeast nutrient (also sprinkled on top of wort), but did not oxygenate. Very happy with the product - I will likely use K97 with my next Kölsch.

Fast Start to Fermentation
The fermentation kicked off almost as fast as Kveik. Good consistent results with this yeast. Always nice to have a dry yeast on hand.

Powdery, but give it time!
Ferments well down to 53-55F. Made some very clean Kolsch style ales with it. I found fining with gelatin helps speed up clearing otherwise I've lagered for 2, sometimes 3 weeks, to get a brilliantly clear beer.

Produces a structured, well balanced beer in my experience. Giver er a shot!

Love this strain
This kolsh dry yeast never disappoints. Every time I've used it - it is always very floculant with high attenuation - always ferments fast, rapidly picking up after pitching and then finishes within a week - usually much faster than SA-05. The beer is clear and consistent - if you like the flavor, you can't beat this yeast.

Excellent yeast for a German kolsch ale
I have used this yeast twice to make a kolsh ale. It is rapid fermenting and produces a clear ale which has a great flavor.
