Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

complexity
I really enjoyed this brew. Very complex flavors. Only my second Scotch Ale, but I will do it again. Not a beer where you would drink 3 22oz btls back to back, but 1 will leave you feeling very satisfied. yeast starter strongly recommended. I did 3 weeks in a primary, 1 week secondary and a month in the btl. It continued to age well over the summer. Just finished my last one.

Ended up dumping it.
May be I don't like Scotish beer, or maybe it was the smoke. I have had some tremendous smoked beers, so I thought I would give this a try. I tried it at a month...terrible. I tried it at 6 weeks,,,terrible. I gave it more time, but each time I tried it, it tasted unforgivably bad. It breaks my heart to pour beer down the sink... but after a while I realized I just couldn't drink it. Sorry.

I brewed while pregnant, and was WAITING for this....
...and it was so worth it. I wanted so badly to taste this beer. It was one of two brews that we made while I was pregnant (my husband got to make IPA's that whole year, so I made two to store for myself when I had our baby).

I didn't want to share these beers. I must purchase this kit again. Very tasty, smokey, and much better over time. Let this one sit for awhile before popping open. 2 weeks in the bottles is not enough. If you can stand it, let sit for at least 6 weeks. So ..... Good.....
