Originating in the Burgundy region of France, in such famous appellations as Montrachet, Meursault, Poilly-Fuisse and Chablis, Chardonnay is now the most popular white wine style in the world. Chardonnay thrives in a wide range of soils and weather climates from France to Australia.  Winemakers love Chardonnay because it produces such a wide range of complex, flavorful wines. From fruit forward and crisp, to lean and minerally, to hedonistic, rich, and oaky, no wine sparks as much stylistic debate as Chardonnay. 

California Chardonnay offers a full spectrum of expressions, as the grape is widely grown throughout the state from the warmer climate of the Central Valley to the cool, foggy hills near the Pacific coast. Traditionally, California Chardonnay is assumed to be full-bodied with a buttery texture and prominent oak character. But more modern approaches produce examples that have little to no oak character at all and can range from bright and fruity to soft and earthy.

Our California Chardonnay is fruit forward, with no oak, and features flavors of apple, pear and apricot.  With an alcohol level of 12.5% this is a Chardonnay with a dry finish and a medium body. Easy to drink and appreciated by nearly every wine lover.

Excellence in White
Bottled last weekend, and I am in LOVE! Had Chardonnays before, and didn't care for them one iota. Had a commercial example again last month (initials are CDB, if anyone can figure that out), and, again, I was not impressed. Had to force that glass down so not to waste alcohol! :)

And so I wasn't really looking forward to the 29 bottles that I just filled. And boy was I wrong - to my relief! Awesome flavor despite being extremely young. Will make this wine again but will add some oak to see the difference.

Orange Chardonnay
Started fermentation on 9/21/21. Using one of your new 8 gallon fermenter buckets. Followed directions exactly. Color of juice looked a little off, but this is my first white kit, so not sure what color should be. Second day, juice was at 78 degrees, so moved into cellar at 62 degrees to finish. Reached 0.996 specific gravity on 9/29, 4 days prior to kit indication. Juice had a light orange tint. Racked on 9/30 added sulphate and degassed, added Kieselsol. Next day added Chitosan and airlock. Now on 10/3, wine is clearing nicely, but still has brown-orange tint.
I sanitized everything with starsan. Have been making wine from fresh grapes for 3 years. Zin, Syrah, Petite Sirah, and Sangiovese. Received a double gold and best of class for 2018 Sangiovese Rose at El Dorado County Fair, so am familiar with wine making, and very strict on sanitation and oxidation issues.
Current Chardonnay tastes nice, but does not look right. I have one of your Signature Zinfandel kits aging in cellar now, and it is very nice. Disappointed in the Chardonnay. May go back to fresh grapes.
