Island Mist - Green Apple Riesling
I used four boxes to make 105 bottles of wine, i.e. 23 gallons of must.

Green Apple Riesling is now one of my favorite white dessert wines next to 'Cornucopia White Tropical Riesling' which is no longer made since that company is out of business.

What a wonderful flavor. Mellow and delightful. Just the right amount of tartness without bitterness. Delicious.

To the must, I added enough sugar (2.75 gallons) to get 12.5% alcohol and adjusted the acid level to 0.75% tartaric (1.5 cups of acid blend). Also, added 40 drops of peptic enzyme. Held off adding Bentonite, so as not to destroy the enzyme, until the sp gr. dropped below 1.020. Prior to adding the clearing agents, I used an electric mixer and degassed for 10 minutes. For final clarity, I used a Buon Vino Super Jet Filter with 0.5 micron #3 filter pads. Ran 6 gallons of water through the filter pads before running the wine. Since the clearing agents did such a good job of clarifying the wine, I found I did not need coarse filter pads #1 or #2. Just used 3 each #3 pads.

Wonderful!
I've fermented two batches of this wine over the last couple of years. It's surprisingly good, although the apple flavor seems to diminish somewhat over time.

I did add a bit more sugar to bump the ABV, and it was still delightful with spicy food, as a dessert wine, and as a social wine.

I'll definitely order again.

Delightful!
I purchased this because of the price. The wife and I are fans of Riesling and Gewurtztraminer, so I thought I would give this a try. This is surprisingly good as a social or dessert wine, even when you ferment it to 'off-dry' or 'semi-sweet'. I will admit that I added a bit more sugar to bump the ABV to a little higher level than the kit instructs, but it turned out very well.
