BEST ANSWER: Yes, it is a complete kit with wine yeast, bentonite, ans sulfie ncluded. Be sure to follow the instructions to the letter! It matures to a very nice wine by 6 months. I received many compliments from guests!

Semi-dry and a bit messy
Just filtered into final carboy for bulk aging. Already very tasty but definitely a bit sweet, similar to a St. Michelle Riesling (not their Reserve Dry Riesling); I had calculated it would end with 12% ABV but I guess it was closer to 11% due to the remaining sugar. How is there sugar left when I let the fermentation run to completion, both visually and by SG no longer decreasing? I suppose they use a yeast that specifically dies when the alcohol hits 10% or which needs a high sugar level to keep fermenting. So avoid if you want a very dry Riesling, but with zero aging it is already comparable to a $12 St. Michelle.

One thing to know is this uses a lot of bentonite. I mean, a LOT. Your must will basically be a muddy slurry - and this is added at the very beginning, not two weeks in after racking. I was really worried about this (OMG, maybe I wasn't supposed to add the whole huge packet?) but of course it resolved itself in the end. But there's a practical impact: in retrospect I can't be sure I measured the SG correctly because the must was already loaded with bentonite, which I presume will affect the measured SG. So hint, irrespective of the instructions, measure your SG before adding the bentotite (other wine kits have had bentotite added after fermentation and the final SG reading, not before) so you know your true starting sugar concentration. Also, having your wine loaded with suspended mud means you can't take those little sips we all feel we have to during fermentation! On a more serious note, the instructions that came with the kit were dead wrong about how to prepare the bentotite, it said dissolve the packet in a cup of juice and no way that works; I even heated it up in a steam bath and I still had a cup of mud and dry powder. I wound up dumping that into the fermenter, repeatedly rinsing out the container, and stirring for a good 20 minutes. Then when I checked the instructions online I found that they had revised the instructions to four cups of juice, which is a lot more realistic. Conclusion, you can't have too much juice during this step; if it isn't dissolving, just add more juice until it (mostly) does..

Even though there was a huge amount of clay added and the carboy looked like brown mud, it settled very firmly and even with two rackings and a 1 micron filtering, I wound up with 5.75 gallons out of the six I started with. Is losing a quart a lot? Come on, you have to lose at least a pint with any wine so that seemed a reasonable amount of scrap (I suppose one could bulk filter the slurry in a coffee filter and recover a cup of so, but that was too much hassle for me). And the "caked mud" at the bottom of the vessel wasn't nearly so hard to clean as I feared, it just rinsed right out. The secondary vessel just had dead lees at the bottom, no cleaning issue at all.

Finally, note: this stuff looks and smells EXACTLY like apple juice. So much so that I thought maybe they had accidentally mis-labeled the Apple Riesling (same company). I even posted a question if anybody else had experienced this same overpowering smell of apples. But again, it resolved itself by the end of fermentation and it is definitely Riesling after all. A lot yellower than store-bought, but still Riesling.

Nice entry kit.
This was my first batch of wine and I thought it came out great! Its a nice dry riesling which is exactly what I was looking for, but still had considerable fuit character in it too. I definitely will make this again.
