Description

With many of the best qualities that brewers look for when brewing American styles of beer, this strain’s performance is consistent and it makes great beer. This versatile strain is a very good choice for a “House” strain. Expect a soft, clean profile with hints of nut, and a slightly tart finish. Ferment at warmer temperatures to accentuate hop character with an increased fruitiness. Or, ferment cool for a clean, light citrus character. It attenuates well and is reliably flocculent, producing bright beer without filtration.

BEST ANSWER: Hello Jeff - I would recommend at least 6 to direct pitch in a 3bbl batch, this would also be dependent on OG Gravity. There is also the option of propagating your own yeast.

Still Fermenting
Beer is fermenting (week 2.5 since I pitched the yeast), May have not oxygenated the wort enough but the OG was around 1.082. Shes heavy. Yeast is rolling like a champ, no issues yet.

Good fruity yeast
Great yeast fruity and slight tartness. I used it in the Galaxy Extra Pale and it is one of the best beer I have made. Definitely not as “clean” as Chico and the beer is a little hazy. So if you want a clean bright beer this is not the yeast for you. But if you want something slightly more fruity this is a great yeast.

Fermented fast
Opened pack 3 days after receiving delivery in a ice pac. all melted but still quite cool and well insulated. I made a starter and let grow for 3 days at 70 degrees. Added it to my wort at 69 degrees and was fermenting the next morning. Mostly done after 5 days, I racked the dry hops and most of the yeast off the bottom of the 27 gallon conical fermenter and will keg in a few days. All pretty fast. Now I hope it tastes wonderful!

Love this yeast works in a ton of styles so good choice for a house strain. Blow off tube recommended this stuff likes to climb out of the fermenter. Easy to top crop

Not Impressed
Used this for the first time in two of my go-to APA recipes where I normally ferment with 1056 or WLP090. Based on the glowing reviews I confidently made twin 6 gal batches and followed my usual procedure (mash at 152F, 1.8L starter, pure O2 for 60 sec, pitch at 63F and ferment 21 days at 63-66F). Fermentation took off rapidly and the two batches finished at 1.012 and 1.010. But taste testing the post fermentation gravity samples made me uneasy about the excessive malt character and esters. The two brews were 32 and 40 IBU and dry hopped with Mosaic and Citra, but the desired hop profile was almost completely drowned out. Four weeks in the bottle did not improve the situation very much and I ended up with 12 gallons of overly complex, fruity APAs that, while drinkable, were nowhere as good as their 1056/W090 cousins.
I post this only to caution those who would do as I did and accept that 1272 is just a slightly maltier version of the Chico strain and can be used similarly. IMO it is much closer to an English yeast and requires serious adjustment to the grain bill and hopping schedule in order to use it in APA/IPA territory. Do what I should have done and test it first in some small batches. In the future I’ll use 1318 when I want properties like this and steer clear of 1272 for my American styles.

Finishes clear
Used this in Ugly Fish IPA with and a full pack of Safale-05 (started with a high OG, needed the extra cells). Best tasting brew I had ever produced. My friends thought I had something commercial on tap!
