Description

Burgundy isolate for barrel fermentation of Chardonnay. Short lag time, alcohol tolerant to 15% and optimum expression at 59 to 77 degrees F. Somewhat nutrient sensitive, it can be slow to finish in low nutrient wines if not fed correctly. But it is worth making the effort: pineapple and floral notes are quickly joined by the development of fresh butter, toasted bread, honey, hazelnut and almond when aged on the lees. This along with contributing a rich and full mouthfeel. CY3079 is lovely as is for that "classic" white Burgundy, or it can serve as a great foundation for a blend.

Mostly Frontenac Blanc,plenty of Gewertztraminer with some cameo appearances by some of my other random planting choices. If you want a hardy vinifera in a marginal climate (6b) Gewertztraminer is a champ.

Really happy with this yeast
I'm really happy with the outcome of this yeast. I used it alongside EC1118 for a Chard kit wine and I'm so impresed with the results. I wasn't sure how it would turn out and was hesitant. I'm so glad I did.

Hoping for good things.
Not sure how the wine is going to turn out but the yeast fermented all the sugar just fine. Wasn’t really wowed by the must at any stage but there were no off smells or stalling so I am hopeful the yeast will add some quality because the grapes were kind of flat, no rot, fully ripe, just no “pizazz” if you will. So if the wine does come around the yeast is going to have to do the lifting

CY3079, bad yeast package
I bought an 80 gram Cy3079 package for my Chardonnay. I inoculated. Sunday, properly hydrated with go-ferm protect, good time frame, temperatures correct and within parameters. Monday morning I fed with mermaid K, but there was little to no activity, still nothing Monday evening so I reinoculated with the yeast I had left and with the needed go-ferm protect.
Tuesday evening, no activity so I went to the local wine and brew supply store and purchased 55 grams of D47, inoculated with even more go Ferm protect and Tuesday morning I have a very violent fermentation going on. Bad Yeast is all I can figure. Now I'm low on go Ferm protect for my other fermentations in a couple of weeks
