Description

Sundew’s ripe strawberry, passion fruit, pear, and stone fruit combine to emphasize desirable notes in modern fruity hops. This Omega Yeast original strain was inspired by its parental strain's fruit esters, which were originally obscured by Belgian phenolic character. Sundew, however, is non-phenolic and incapable of producing the spicy clove flavors that were previously competing with its pure, juicy red-fruit bouquet.

Monster
A monster. I fermented strawberry mash with it. I often feared that it would drag me into the barrel. It's like Venom. I ended up with a very nice distillate.

It's a beast
True to its Belgian origins, this is a beast. You'll need a blowoff and some way to control the temp rise. Very attenuative, 84% on my batch. Definitely strawberry notes from the starter, and lots of fruity esters from the primary ferment. Seemed to accentuate hops and downplay malt flavors. That, plus high attenuation means be careful not to overbitter.
Not what I would consider highly flocculent, more of a medium floc. If you want clear beer, you'll need a cold crash and gelatin.Probably a better choice for a hazy beer.

Put it in an IPA.
Put it in a fruity west coast IPA, it made the best beer ever in my 11 years of brewing. Wow! Only problem is that it was gone in 2 weeks. Not sure I'll ever use anything else. Some of these weird new strains have a hard time clearing up, I do whirlfloc and gelatin and this came out nice and clear.
