Description

Lallzyme EX-V is an enzyme designed for use on premium red wines that are destined for long aging. Premium reds will benefit from the use of this enzyme tremendously, as it will result in a more structured wine, with deep, stable color.

Lallzyme EX-V is a pectinase with cellulase and hemicellulase side activities for red wines intended for aging. it has a specific action on both grape cell walls and cell membranes. This action allows for a complete and rapid release of anthocyanins and a more efficient release of tannins, leading to stable anthocyanin-tannin bonding. The end result of this bonding is a more structured wine, with a deep stable color that will last throughout its years of aging. Aromatic profile analysis indicates that Lallzyme EX-V increases the release of aromatic compounds while respecting the varietal characteristics of the grape.

Use .075 g/ gal must.

Store at room temperature, close to 25 C° (77 F°). Once rehydrated use within a few hours.

Would you consider adding this to a kit Amarone that came with grape skins? My plan is to age the wine for 2-3 years.

BEST ANSWER: I would not add Lallzyme EX-V to a wine kit - even for wine kits with grape skins.

This is a very good enzyme which draws, primarily, color from the grapes. It takes action on the grape skin cell walls and membrane. it won't do much of anything to the juice. The juice in the Amarone kit should already have its color established.

The grape pack will add body, flavor and sugar to the must. It won't contribute much color - if any. The grape pack is likely processed with a good dose of pectic enzyme. It's crushed grapes which appear somewhat dehydrated (very thick stuff) upon arrival. IMO Lallzyme EX-V it's not needed.

Good luck and enjoy. I am still aging the Amarone I made in 17. It continues to improve and is enjoyable.

More juice, more color
I got significantly more juice out of my Nortons and Chambourcins with this enzyme vs. the basic Lalvin all-purpose liquid enzymes. And, it doesn't take much of it at all - resist the temptation to use more than directed.
