Description

Medium Plus toast cubes manufactured by StaVin. Cubes have a longer contact time than traditional chips do, which make them better for long-term aging of wines and beers. Also, longer contact time means longer extraction of flavors (3-6 months), which leads to a more complex combination of flavors. Chips are usually done giving flavor after a week, there by contributing a harsh, flat oak flavor.

I use the Hungarian Oak to add oak to all my red wine kits because I believe it enhances the taste after extended aging.

For my Top off wine which I keep in a 5 gal carboy. Stavin makes the highest quality cubes I’ve come across.

Used with a demijohn sized infusion tube in a 100L Speidel tank, it provides a more complex yet subtle suite of oak flavors and aromas than the French cubes.

I used these cubes in last year's ancient vine zinfandel and it made a big difference. I will be using this again for more zin and also for sangiovese.

I use Hungarian barrels. When the barrel's flavors become neutral, I use the cubes to make the barrels last longer.

Cubes work great
There's nothing wrong with using cubes to give it that oakiness you desire in a much shorter time than using barrels. Hungarian oak is somewhat medium or moderate in imparting oakiness...so it's great for something you don't want a strong oakiness in (like a Merlot).
